Would the person know you one day and not the next, kind of going back and forth or forget altogether?

Kind of. Are you asking this on behalf of someone? They may remember you and they may not. Sometimes its age as well. My great aunt supposedly had Alzheimers, but then they discovered that part of her brain was dead on the emotional side, and therefore she lived in the past somehow – and would never remember people very well. She still doesn't.

my grandad was recently diagnosed so i understand completely, exactly same issues, it comes and goes, best desciption I have is that sometimes he's time travelling inside himself.
Is he officially diagnosed? (CAT scan and interview etc.) It helps to reinforce to him that there is a problem and he'll accept help easier, there's loads of statutory and charity support/ideas on the web.
Most important thing for my grandad was getting him in a routine.
