i was thinking a combination of gangrene, Alzheimers, and cancer would do the trick. The alzheimers can alter mental status and make someone violent/aggressive and non responsive to logic, the gangrene and cancer (im thinking liver cancer) can generate the gross outer appearance. anyone have any better options?

Rabies.

Mix rabies for the bitting effect. And also would make others rabies infected.
